The resulting cupcakes were moist, slight chew, and the coffee added a depth to the flavour and ‘adultified’ them, although kids will gobble these up too.

Only hitch with this recipe is that I baked them when I’m the only one here this week - going to have to find some friends and neighbours to share them with, which I don’t anticipate will be a problem!
